The 2016 Chateau Doyac wine has an opaque ruby blend of 75% Merlot and 25% Cabernet Sauvignon that was aged for 12 months in French oak (25% new). This Chateau Doyac’s 2016 is a wine that requires plenty of aeration and overall patience at this early stage. This particular bottle was splash-decanted and serially tasted over a 2-3 hour period, during which time it continued to evolve. Fragrant, medium-to-full-bodied and an absolute delight to drink in reference to its potential, this performs well above its pay grade. Black currants, Montmorency cherries, bay leaves, graphite and cedar are good descriptors for the nose and palate, the latter being supported with fresh acidity, seamless alcohol (14%) and well-integrated oak. At this early stage, the tannins flex substantial grip on the solid middle palate and continue to do so throughout the medium-length back end. Those who are young, on a budget and desire to stock a cellar for future enjoyment should consider laying down this well-priced, off-the-radar Bordeaux. Give it some time in hibernation and enjoy it over the ensuing several years. A higher score may be merited as this wine fleshes out. Drink 2023-2031.
