    Taittinger Nocturne is a sweeter champagne, made from 40% Chardonnay and 60 % Pinot Noir and Meunier from 35 vineyards. It is the result of several harvests undertaken when the fruit had reached perfect maturity. The uniqueness of its mix and its long maturation period in the cellars gives it its fullness and smoothness. This Taittinger Nocturne works well as an accompaniment to dessert, or simply as a digestif on its own after a meal.

    The body of the Taittinger Nocturne Champagne is pale yellow in colour with shimmering highlights. The bubbles form a delicate ring of fine foam. The subtle and delicate bouquet reveals the delightful aromas of yellow peaches and dried apricots. The entry is smooth and creamy, yet very crisp.The palate gives way to flavours of raisins and fruits in syrup. The long and smooth finish is distinctively sweet and full of flavour. A mature, rich and round wine, Nocturne is also exceptionally smooth and creamy.

    Taittinger Nocturne is a champagne to be enjoyed at the end of an evening. It is the perfect accompaniment to dessert or foie gras on gingerbread – and will gladly have champagne lovers celebrating all night long.

    The Barossa Valley is rightly famed for its red wine production. On the Southern reaches of the region, the climate has more similarities with the Adelaide Hills than the valley floor. Here, varieties such as Merlot thrive in the slightly cooler temperatures.     The Opportunist Shiraz wine by Wild & Wilder has a crimson red color. This Opportunist Shiraz wine has an aromatic bouquet of ripe fruits, cherries and blackcurrants, with notes of freshly ground coffee, dark chocolate, peppermint, liquorice and subtle pepper. This Australian Red Wine has rich silky palate with creamy black fruits and a little savoury smokiness from oak.

    The fruit for the 2021 Opportunist Shiraz wine comes from three separate blocks of the same vineyard in the Langhorne Creek. Winemaking for this wine is simple with fermentation in tanks followed by eight months on oak to increase texture and varietal expression. It is aged in used French oak barrels for eight months.
